These Oreo Cheesecake bites require Oreo cookies, cream cheese, heavy cream, sour cream, granulated sugar, melted butter, vanilla extract, and eggs.

First, place the whole Oreo cookies in a food processor and blend them until they become fine crumbs.

Add the melted butter to the crushed cookie crumbs in a small bowl and combine with a fork.

Then fill paper lined muffin cups with 1-2 tablespoons of the Oreo crumb mixture. Press the crumbs down with the bottom of a 1/4th measuring cup to form a crust.

To make the Oreo cheesecake bites batter, beat room temperature cream cheese in a medium bowl with an electric mixer for 2-3 minutes until smooth.

Next, add the granulated sugar, sour cream, heavy cream, and vanilla extract to the cream cheese and beat again until smooth.

Add the room temperature eggs and beat again just until incorporated into the cheesecake batter.

Add the remaining crushed Oreo cookies to the batter and fold together with a spatula.

Once the Oreo crust has cooled, fill each muffin tin cup equally with the Oreo cheesecake batter and bake for 16-17 minutes at 350ºF.
