Jalapeno Cheese Bites

Tostitos tortilla chip scoops are filled with cream cheese, pepper jack cheese, corn and baked until melty and garnished with fresh jalapenos and cilantro for the perfect make ahead bite sized appetizer to share with friends.

Ingredients
  

  • 1 bag Tostitos tortilla chip scoops
  • 1 cup Frozen Corn
  • 8 oz Cream Cheese room temperature
  • 1 large Egg
  • 1 cup shredded Pepper Jack Cheese (or other favorite cheese)
  • 2 Fresh Jalapenos
  • Cilantro for garnish

Instructions
 

  • First, preheat the oven to 350ºF. Then, in a medium mixing bowl, combine the room-temperature cream cheese, shredded pepper jack cheese, and egg. Then, add the frozen corn and mix.
  • Next, spread tortilla chip scoops on a parchment-lined baking sheet. Some of the Tostitos scoops will be broken, but use only the ones still intact to hold the filling.
  • Fill each chip scoop with two teaspoons of the cream cheese mixture. Bake for 15 minutes until golden brown on top.
  • Remove from the oven and finish with sliced fresh jalapeños and chopped cilantro. Serve warm or at room temperature.

Notes

This recipe makes about 28 jalapeno cheese bites.
