These easy Mini Pecan Pie Bites are made with phyllo cup shells and packed with delicious Fall flavor and are the perfect dessert to feed a crowd.

For these mini pecan pies, you will need, chopped toasted pecans, frozen phyllo cups, brown sugar, corn syrup, butter, eggs, vanilla extract, cinnamon, nutmeg, and salt.

First, melt the butter and combine with the brown sugar in a large mixing bowl.

Next, add the chopped toasted pecans, corn syrup, eggs, vanilla extract, cinnamon, nutmeg, and salt. Stir with a spatula to combine the ingredients.

Next, place the frozen phyllo cup shells on a parchment lined baking sheet and fill each cup with the pecan pie mixture and bake at 350º for 10-12 minutes.

Once the edges turn golden brown, remove the mini pecan pies from the oven and immediately transfer them to a wire rack. Serve them at room temperature and enjoy!

Once the pecan pie bites have cooled completely, they can be refrigerated in an airtight container for up to three days! Reheat at 350ºF for about 5 minutes until warm.
